High Mountain Organic Guizhou Emerald Green Tea
Origin and Growing Conditions
Emerald Green Tea is a distinguished Green Tea variant from the picturesque Guizhou Province, where Wu Mountain Tea’s partner farm cultivates this organic delight. Nestled between 1000 and 1300 meters above sea level, the USDA-certified organic tea garden thrives in a unique plateau climate. The region experiences significant temperature variations between day and night, along with occasional clouds and fog, contributing to the tea's exceptional quality. Guizhou's elevated terrain, combined with a sparse sunlight regimen, results in a prolonged growth period and a reduced presence of natural pests.
Processing
The crafting of Emerald Green Tea involves a meticulous combination of traditional Mou family tea-making techniques from Guizhou and modern automated processing technologies.
Fresh Leaf Sampling: One bud, two/three leaf plucking of tender Spring flush leaf material is employed for Emerald Green Tea production. Before plucking, leaves are tested for compliance with EU and USDA standards for organic cultivation.
Withering: Natural withering and assisted air blowing initiate physical and chemical changes, reducing moisture, dissipating grassy odors, and enhancing fragrance.
Fixation: High-temperature deactivation of enzymes, preventing oxidation, maintaining color, and developing aroma.
Rolling: Tightening the tea leaves into compact strips to shape appearance, release tea juices, and improve freshness.
Drying and Aroma Enhancement: Maximizing fragrance and refining the pure aroma of Emerald Green Tea.

Tasting Notes
Dry Leaf Appearance: The tightly wound, spiral leaves exhibit a dense, glossy, dark green hue.
Aroma: The initial fragrance has a thick, rich, and savory marine tone, like New England clam chowder. With subsequent infusions, the aroma develops into a more fruity and nutty fragrance. Overall, the aroma body is fresh, rich, and pure.
Taste: The taste is very full-bodied and multi-layered. Robust savory components and a complementary subtle tannic structure are tied together through a long sweet finish.
Soup/Liquor Appearance: The clear yellow-green and bright liquor mirrors the pristine surroundings of Guizhou, embodying the essence of Emerald Green Tea.

Preparation
Hot Brewing Method: Utilize water at approximately 80-85°C, allowing 1g of tea for every 50ml of water. Infuse for 10-15 seconds in the first three rounds, extending to 20-25 seconds for subsequent infusions.
Cold Brewing Method: In warmer seasons, savor the tea cold. Brew 1g of tea with 50ml of water, infusing with cold water and refrigerating for several hours or overnight.
Suggested Food Pairings
The distinctive savory marine and chestnut notes, and fresh, rich taste of Emerald Green Tea make it a versatile companion for various culinary delights. Consider pairing it with:
Light Pastries: The tea's freshness complements the delicate flavors of pastries, creating a delightful tea-time experience.
Seafood Platters: The savory and refreshing taste of the tea serves as a perfect counterpart to the nuanced flavors of seafood, enhancing the overall dining experience.
Green Salads: Match the tea's lustrous green color with a vibrant green salad, allowing the freshness of both to shine.
Fruit Medley: The sweet and fresh notes of Emerald Green Tea harmonize with a variety of fruits, creating a refreshing and health-conscious pairing.

Excellent tea! I highly recommend it. The initial taste reminds me of a savory seaweed and fresh leaves.

I’m pretty new to tea and I got this Green Tea along with one of each major type of tea so I could see what type I like the best. I had had green tea before, and had always thought it was extremely bitter and I never could finish a bottle of it without adding a ton of sugar and milk. I wasn’t looking forward to trying this at first but was pleasantly surprised by its wonderful floral and chestnut smell right out of the bag which only got stronger when steeped in a Gaiwan, along with an incredibly rich emerald color. The taste was what really struck me however, as it was actually very enjoyable with fruity and chestnut flavors, and is so far my second favorite type of tea now aside from White Tea. I’m very glad I got a sample bag of this and will more than likely order more in the future. If you think you don’t like Green tea like I did, or if you’re looking for a delicious green tea, I can with confidence say this one may be what you’re looking for.

ABSOLUTELY OUTSTANDING! I was about ready to give up on green tea because I had purchased some not-so-good stuff from my neighborhood dealer. However, this emerald green tea completely changed my opinion on the matter. I did not know this color existed in nature. Once you throw some water on top of the leaves for its first few steeps, they become a color halfway between neon green and matcha. Simply outstanding. Flavor is unlike any other green tea I have ever tasted—by a LONG SHOT. Hard to describe because I am still brand new to tea tasting, b it you can tell it is of utmost quality.

I’m not sure if I’m doing something wrong or what, but it tastes like soap. I always make sure to steep it for 3 and a half minutes at 80°, like I’ve always heard that it’s supposed to be but it just tastes like soap. Is there something that I don’t know that I need to be doing?

I had left a rather harsh review on the soap-like taste of this tea. This was an error on my part, as I had put far too many leaves in the pot, and let the more negative flavors grow too strong.
After reducing the amount of leaves in the pot, I was left with a pleasant taste which was similar to freshly cut grass, cooked spinach, and the raw leaves of the dandelion.
